A familiar face to residents, Mr. Seby Mascarenhas has been plying his roadside cart since 1999 at Miramar, Panaji - Goa, and selling various varieties of Shawarma. Getting him to sit back and talk is a major task. A typical workday is 12-hours, begins with cleaning, deboning, marinating the chicken in the special masala, and also kneading dough for the bread to the selling of live shawarmas which begin at 4.30 pm.
Seby sells about 300 pieces a day and says that the taste is just as good as it was two years ago.
The only reason why he has survived and done well is because of thorough knowledge of the dish.
Now, Seby has put up a café in the heart of the Panjim city called Lafansa Shawarma Café and will soon start another Café in St Cruz where he will be selling many other delicacies like Burgers, Sandwiches, etc apart from Shawarmas.
